Mexico:Chocolate Chicken Mole

Chicken stock 1 Cup
Tomatoes 6 Numbers
Oregano 1/2 Teaspoons
Onion chopped 2 Numbers
Garlic chopped 4 Numbers
Raisins 8 Numbers
Almond 6 Numbers
Fennel seeds 1 Teaspoons
Allspice 1/2 Teaspoons
Cloves 3 Numbers
Cinnamon sticks 1 Numbers
Cumin seeds 1 Teaspoons
Coriander seeds 1 Tablespoons
Chicken 1000 Grams
Red chilly paste 2 Tablespoons
Olive oil 2 Tablespoons
Chocolate (melted)1/2 Cup


Chicken marinate with chilly powder, salt and pan fry them till chicken is tender.
Cut Tomatoes into half and char on a griddle till it is soft. In a pan dry roast the following ingredients Coriander seeds,
cumin seeds, cinnamon sticks, cloves and then add allspice, add fennel seeds, almonds, raisins, chopped garlic,
add chopped onions, cook this and add oil, oregano,
add roasted tomatoes, chicken stock, salt and let it cool down,
put it in the blender and make a paste. Heat olive oil and add red chilly paste,
cook it for a minute and add made Marsala paste cook this mixture for some time,
and add melted bitter chocolate, salt, Mix it well cook for some more minutes.
And pour the sauce on the chicken pieces. Serve this with Mexican rice.
