Yogurt(Homemade or readymade) 2 cups
Cucumber (Indian or American)
Mustard seeds - 1 tsp
Red Chilly - 1
Turmeric - Two pinches(1/4 tsp)
Oil - 1tsp
Green chilly - 1
Seasoning - Urad dal, Mustard seeds, Cumin,
Fenugreek, Asafoetida (Each 1/2 tbsp)
Curry leaves - 7 or 8(1 tsp)
Coriander leaves(optional) - 1 1/2 tsp
Salt - According to taste
Take desired of curd in a bowl. Grate cucumber very thin(grating is preferable instead of small pieces to enhance the taste). Mix this in yogurt.
Take appproximately 1/2 tsp mustard seeds, one red chilly, and a pinch of turmeric and grind these with little bit of water to a fine paste. Mix it with 4 drops of oil with a spoon,cover it and set aside for 15
minutes. Add this to curd mixed with grated cucumber adding salt and another pinch of turmeric and mix it well. Prepare the seasoning with 1 tsp of oil being heated. Let the seasoning ingredients mentioned above splutter along with curry leaves and mix it with the curd. Decorate with small leaves of coriander finely chopped (Optional)with one green chilly cut into small pieces.
Home-made yogurt has more probiotic qualities than ready-made yogurt. Any way, both have equal amounts of calcium. Whoever have allergic reactions of taking milk because of their health conditions or who doesn't like, can compensate their calcium levels with these kind of yogurt recipes.
This recipe serves approximately 3 people. You can increase all the ingredients accordingly.
People who can't tolerate the pungentness of mustard seeds, they can reduce the amount.
Even though Mustard seeds have some medicinal qualities, they have a quality making the body heat. So taking them limitedly is suggestable. You can avoid adding green chilly if you can't eat spicy.
