-Fresh leafy greens (like spinach, amaranth, or tender saag) – 2 cups (finely chopped)
-Besan (gram flour) – 1 cup
-Rice flour – 2 tablespoons (optional, for crispness)
-Green chilies – 2 (finely chopped)
-Garlic – 4-5 cloves (crushed)
-Cumin seeds – 1 teaspoon
-Turmeric powder – 1/2 teaspoon
-Red chili powder – 1/2 teaspoon (optional)
-Salt – to taste
-Water – as needed
-Oil – for greasing or light frying
In a large mixing bowl, combine the finely chopped greens, besan, rice flour, green chilies, garlic, cumin seeds, turmeric, red chili powder, and salt. Mix all the dry ingredients thoroughly first, then slowly add a small amount of water to form a thick, dough-like batter that holds its shape.
- Grease your hands and take small portions of the mixture. Flatten them into small discs or patties.
Steaming - Arrange the discs in a steamer or on an idli plate. Steam for about 10–12 minutes until they firm up.
- You can add sesame seeds for extra flavor and crunch.
- Serve hot with green chutney, tomato ketchup, or simply as a tea-time snack.
You can also serve them with rice and dal as part of a meal.
