Rajasthani Mirchi Vada

For stuffing
Medium sized potatoes, boiled and peeled - 5-6
Finely chopped coriander - 1 tbsp
Red chili powder - 2 tsp or according to your taste
Garam masala powder - ½ tsp
Dried mango powder - 1 tsp
Salt to taste
Fennel seeds - 1 tsp
Coriander seeds - 1 tsp

For batter:
Gram flour - 2 cup
Salt - ½ tsp
Baking soda - ¼ tsp
Oil to deep fry

For Pakoras:
Chili peppers (mirchi) - 6 (I used white)


For Stuffing:
Heat a pan; add coriander seeds and fennel seeds and toast. Remove and slightly crush them.
In a plate; add boiled potatoes, chopped coriander, red chili powder, garam masala powder, dried mango powder, toasted and crushed coriander seeds and fennel seeds and salt.
Mash well to make a mixture.

For Batter:
In a bowl, add gram flour, add 1 tsp salt, water and whisk well to prepare a thick batter. Add baking soda and whisk well again.

For Vadai:
Now scoop out the seeds from the mirchis (peppers) slit lengthwise and discard seeds.
Wash peppers and dry them with muslin cloth. Stuff with potato mixture.
Heat oil in a pan.
Now coat the mirchis (peppers) with the batter and deep fry them till they are crisp and golden.
Drain on an absorbent paper. Serve piping hot with any chutney or sauce.


Rajasthani Mirchi Vada is a very famous street food of Rajasthan, which was originated from the city of Jodhpur. Thus, they are also known as Jodhpuri Mirchi Vada. They are chili peppers stuffed with spicy potato filling and then dipped in gram flour batter and deep-fried. Their hot flavors and extremely piquant taste is simply out of this world.
