Bruschetta with tomatoes and roasted peppers

1 large crusty bread loaf or baguette
Olive oil
2 cloves of garlic, cut in ½
6 ripe on the vine tomatoes
1 small bunch of fresh basil, leaves picked
1 teaspoon of white wine vinegar
2 tbsp of extra virgin olive oil
Salt and freshly ground black pepper
1 small jar of roasted peppers, chopped
Freshly grated parmesan cheese


First make the topping.
Cut the tomatoes into ¼’s and remove the seeds.
Cut into a ¼ inch dice and place into a bowl.
Add the vinegar, peppers and extra virgin olive oil.
Tear the basil leaves into the mix and mix through.
Season with salt and pepper and set aside.
Now make make the Bruschetta.
Cut the bread into ½ inch thick slices. Rub each slice on both sides with the garlic.
Pour plenty of olive oil into a bowl and toss the bread through this so that all the slices are coated with oil.
Season with a little salt and pepper.
Heat a char grill pan on the stove until hot.
Char grill the bread until it is crispy on both sides.
Once cooked brush both sides of the bread with the garlic cloves.
Top the bread with the tomato mix and grat over a little fresh parmesan.


Brushcetta is typical of Italian food. Simple, quick and tasty.
