Cantaloupe and Blueberry Gluten-Free Chia Seed Pudding

1 cup unsweetened almond milk
2 cups cubed fresh cantaloupe
1/2 tbsp agave (or other natural sweetener, if desired)
1/4 cup chia seeds
1 cup fresh blueberries
1 cup diced fresh cantaloupe (for garnish)


In a blender, combine the almond milk, agave, and fresh cantaloupe. Blend until smooth. Adjust the sweetener to taste.
Pour the contents of the blender into a medium-sized bowl. Add the chia seeds and stir until well combined.
Cover and refrigerate for 2-4 hours, until the pudding has thickened and chia seeds soften. You can chill overnight as well. Stir the pudding at least once while chilling to prevent the chia seeds from clumping together.

To serve, pour desired amount of pudding into a bowl. Garnish with fresh blueberries and diced cantaloupe. You can also garnish with gluten-free granola or cereal, if desired. Serve immediately.


Notes: Adjust the natural sweetener to your preference. If you purchase a very ripe cantaloupe, you may not need added sweetener at all. In place of agave, you could also use real maple syrup or honey.
