Pineapple Sandesh

6-7 Canned/fresh pineapple thin slices

2 cups milk

tsp vanilla essence or pineapple essence

2 tbsp sugar, according to taste

1 tbsp lemon juice

For garnishing

Chopped almonds

Pistachios powder

Dried cherry or cranberries


Boil the milk in a deep non-stick pan on a high flame.

Add the lemon juice, mix well and cook on a low flame, while stirring continuously.

Strain the mixture using a strainer and allow all the whey to drain out.

Add powdered sugar and essence to it.

Knead the dough for 10-15 minutes until soft and smooth.

Place the pineapple slices and spread a layer of dough mixture.

Garnish with chopped almonds, pistachios and dried cranberries/cherry.

Refrigerate for half an hour before serving.

Serve cold.


Pineapple Sandesh is a traditional Bengali Sweet dish. It is a healthy and delightful dessert made with just three prime ingredients. This is a no bake, easy to prepare dish, that can be prepared even by kids during cooking competitions.
