Tomato Rice

Main Ingredient: Tomatoes and Rice

Cooked rice(either Basmati or Ordinary)- 2 1/2 cups
Tomatoes - 4 of small or medium size (if they are big, 3 are enough)
Finely grinded cumin powder 2 tsp
Green chillies - 2
Cooking oil - 1 tbsp
Chopped garlic - 1/2 tsp
Urad dal, mustard seeds, cumin seeds(to temper or seasoning) - 3/4 tsp each
Curry leaves - 1 tbsp
Cashews - As per taste
Red chilly powder - less than 1 spoon
Turmeric powder - small pinch


Cook rice and spread it in a plate. Don't cook too soft. In a pan, place the cooking oil. Let it heat. Add the seasoning ingredients as mentioned above and let it splutter. Add the garlic pieces and fry them till they get brown. Splutter the curry leaves. Add cut pieces of tomatoes with green chillies. Let them cook until the tomatoes get soft. Add cumin powder and red chilly powder and salt with a pinch of turmeric powder. Mix this in cooked rice. Mix well and decorate with fried cashews. If you like, decorate with cilantro leaves also. (Optional)


Some people like to add onions in every recipe. If you want to, after you splutter the seasoning ingredients, fry onions until they get brown and add tomatoes. Instead of chopped garlic, you can put 1 tsp of ginger garlic paste also.
