½ cup whole wheat, hulled and broken
¼ cup sugar
3 cups milk
½ tsp cardamom powder (elaichi)
A few Saffron (kesar) strands
Chopped almonds, for garnishing
Few raisins, for garnishing
Chopped Pistachios, for garnishing
Wash and soak the wheat in water overnight.
Drain excess water and grind the wheat to a coarse paste without adding water.
Pressure cook the wheat with a cup of milk and ½ cup of water till the wheat is cooked.
Heat the remaining 2 cups of milk, sugar and saffron in a deep non-stick pan, mix well and cook on a medium flame for 10 minutes or till the milk is reduced to half, while stirring occasionally.
Now add the cooked wheat, cardamom powder, chopped almonds and raisins to the reduced milk and mix well.
Garnishing with chopped almonds, pistachios and raisins.
Serve hot with ghee.
You can serve this dish hot or cold.
Keep on stirring the milk before and after adding wheat otherwise it would stick to the container.
According to sweetness required you can add sugar .
You can also make spicy kheech.
