Olive oil - 2 tbsp 10ml
Garlic - 1 tsp 2g
Onion - ½ cup 50 g
Quinoa - 1 cup 150 g
Lemon juice - 2 tbsp 10ml
Salt to taste
Vegetable stock - 2 cups 400ml
Coriander - 3 tbsp 5g ( Chopped )
Heat oil in a pan.
Once the oil is hot, add garlic and fry for a few seconds.
Add onion and fry till translucent.
Add quinoa, lemon juice, salt and vegetable stock.
Cover and cook until quinoa is softened.
Remove the pan from heat and let the quinoa rest for 10 minutes.
Add coriander and mix gently.
Serve as a side dish with a slice of lemon on top to squeeze over it while serving.
