100 gms potatoes cubed
100 gms carrot cubed
100 gms cauliflower
50 gms green peas
50 gms French beans
2 coconuts freshly grated
200 gms shallots sliced
100 gms tomatoes sliced
3 green chillies slitted
5 gms mustard seeds
50 gms coconut oil
25 gms ginger garlic paste
2 gms Marathi moong
2 gms Kalpasi
2 gms coriander seeds whole
2 gms cumin seeds
25 gms black pepper
4 red chilli dry whole
5 green cardamom
3 cloves
2 gms cinnamon stick
1 gm fenugreek seeds
25 gms poppy seeds (boiled & grinded)
2 star anises
5 gms fennel seeds
2 nos bay leaf
2 sprigs curry leaves


1. Roast freshly grated coconut in a pan.
2. Add all the whole spices to it and toast them till brown.
3. Heat coconut oil and add mustard seeds, green chillies, sliced shallots and cook till golden brown.
4. Add ginger garlic paste and cook.
5. Add tomatoes and cook till tomatoes are done.
6. Add vegetables and the ground spices and cook.
7. Add seasonings and serve with tamarind rice or tomato rice.
