-Idli & Dosa Batter- 2 cups
-Bread (whole wheat/multigrain)
-Finely chopped medium-sized onion- 1
-Finely chopped green chilly- 1
-Finely chopped fresh coriander leaves- 1 tablespoon
-Curry leaves (chopped)- 1 sprig
-Mustard seed- 1/2 teaspoon
-Cumin seed- 1/2 teaspoon
-Turmeric powder- a pinch
-Asafoetida- a pinch
-Sesame/olive oil for toasting bread
-Salt as per taste
- Start by heating a small frying pan and add one teaspoon of sesame oil and the cumin seeds, mustard seeds, asafoetida. When the mustard seeds start to crackle, add the curry leaves and sauté for a few seconds.
- In another bowl, add the dosa batter along with the chopped onion, chillies, (any other vegetables you would want), turmeric powder, and the above-sauteed mixture and mix it properly.
- Next, heat a non-stick Tawa/griddle and add a few drops of oil. You can also use butter for toasting the bread.
- Dip one side of the bread slice in the batter prepared and put it on the Tawa. Toast it on a medium flame until it turns golden brown.
- Pour batter on the other side of the bread and flip it carefully. Add a few drops of oil on the edges and toast it till golden brown (you can also dip both sides of the bread in the batter carefully, and toast either side as per convenience).
- Dip the remaining bread slices in the batter and toast the same way.
