Raw Banana/Plantain (Medium Sized, 1)
Small Cucumber (1)
Tomato (1)
Green Chili (1 or 2 )
Turmeric (3/4 tspn)
Salt (According to Taste
Shredded Coconut (2 Tablespoons) Plain Yogurt/Curd (2 tablespoons) Water (for grinding coconut)
For Seasoning: Oil Mustard Mehti Seeds Curry Leaves
Cut the vegetables (Plantains, Cucumber, Tomato)
Add Turmeric, and a little water and allow it to cook.
After it cooks (7-10 mins), add the ground coconut paste(Grind Cocunut + Green Chilies in a mixer until it is a paste) to the vegetables. Add salt accordingly.
Let everything boil well (add water if necessary)
Simmer the gas and add 2 tablespoons of yogurt/curd. Now season in a small pan by adding two teaspoons of oil, mustard, methi seeds, and curry leaves. (NOTE: This is Moru Kootan with no Onion and Garlic)
You're Done! Enjoy your Moru Kootan with rice/dosa/idiyappam or anything else of your choice.
