Chicken Thai Red Curry

1 small chopped onion
stalk lemon grass
2-3 fresh red chilies
3 buds of garlic
spoon white pepper
2 tablespoon chili powder
2 teaspoon cumin seeds
3 tablespoon light soya sauce
1 tablespoon brown sugar
teaspoon turmeric powder
2 teaspoon peanut oil
Salt as per taste


Step 1: Take warm water in deep base pan, add red chili powder and keep it for few minutes. Then separate it after sieving.

Step 2: Meanwhile, heat a frying pan and add whole coriander seed, cumin and red chili powder and slightly roast them. Remove from the flames after the spices give off an aroma. Then crush them into fine powder. Add oil and keep it in air-tight jar.

Step 3: Put this mixture in a big pan and roast while stirring constantly. Now add salt, chili powder, coconut milk, citrus leaves and all the remaining spices.

Step 4: Add chicken pieces and vegetables in the mixture and bring it to boil. Cook well.

Step 5: Spread basil leaves on top and serve the preparation with white or brown rice.
