8 brinjals
4 onions sliced
4 green chillies slit lengthwise
3 tbsp of masala powder
1 cup of thin coconut milk
ghee to fry
salt to taste
4 to 5 curry leaves
a small size of tamarind soaked in water
1 cup of thick coconut milk
Heat ghee in a pan and fry the onions and green chillies for few minutes. Add the brinjals, masala powder, curry leaves and thin coconut milk. Cook of low heat till the brinjals are tender.Extract the tamarind pulp and add to the curry.Simmer for 4 minutes and add the thick coconut milk and bring it to boil.
