Tropical Fire Bacon-Cheeseburger

Ingredients

500 grams or 1 lb. of ground pork
500 grams or 1 lb. of ground beef
6 to 8 habanero chilies, finely chopped and seeded*
6 cloves of garlic, minced
large pinch of fine sea salt
1.5 tablespoons of olive oil
6 strips of bacon (make it 12 for extra bacon
12 slices of American or Cheddar cheese
one small pineapple, cut into thin slices
pickled jalapeño slices (amount it to taste)
hamburger buns

Directions

1. Heat the olive oil in a pan, once warm add the chopped chilies and sauté until they are completely softened, just don't burn them. Next add the minced garlic and pinch of sea salt, sauté for another 3 minutes or until the garlic begins to soften. Set aside to cool. Now cook the bacon and set on a plate lined with paper towels to drain off any excess fat. Have the pineapple and jalapeño slices ready before proceeding.

2. To make the patties, use a knife to divide the ground pork into six equal sized pieces -- do not shape or work the meat yet. Now repeat the process with the ground beef. Grab one of the pork portions and place it on a cutting board, then scoop some of the habanero-garlic mix into the meat. Using your fingers (you may want to wear some latex gloves for this) to lightly toss the chili mixture into the patty. Gently gather and shape the meat into a round shape, but leave the meat as loose as possible. Continue with the same process to make the rest of the patties, you should end up with 12 total patties -- or 6 pork and 6 beef.

3. Heat a flat grill pan or a large frying pan. Once hot, gently place the loose patties onto the hot surface, but do not overcrowd the grill/pan. Flip and cook each patty until it's no longer pink, then remove from the pan and set aside. Once you have cooked all of the patties you can begin assembling the burgers. For each burger you will need one pork patty, one beef patty, and two slices of cheese. Place one beef patty back on the hot pan, then add a slice of cheese on top of it; Now place a pork patty on top of the cheese, and add another slice of cheese onto the pork patty. Repeat for all the burgers and allow the cheese to melt, then place the burgers on the buns. To finish topping the burgers add two slices of bacon on each burger, then the slice of pineapple, then the sliced pickled jalapeños, and lastly the top bun. Serve straightaway.
