Enchiladas

Ingredients

taco shells(or make one from scrach) 1/2 Numbers
baked beans (from can) 1 Cup
tomatoes 2 Numbers
onion shredded fine 1 Numbers
capsicum finely chopped 1 Numbers
cheese 1/2 Cup
mexican hot sauce 1 Cup
butter or oil 1 Tablespoons

Directions

1. Roll enchiladas as for tacos.
2. Roast them on griddle, pile up.
3.Keep warm by covering.
4. If made ahead, steam pile a bit to soften enchiladas.
5.Blanch tomatoes in hot water and peel. Mash
6.Heat oil in a pan, add onions, stirfry till tender.
7. Add capsicum and further stirfry for 2-3 minutes.
8. Add tomatoes, simmer for 5 minutes.
9.Add hot sauce remaining after applying to enchiladas.
10.Add salt to taste.

An enchilada is a corn tortilla rolled around a filling and covered with a chili pepper sauce. Enchiladas can be filled with a variety of ingredients, including meat, cheese, beans, potatoes, vegetables, seafood or combinations.

This diash is best snack time dish and is very filling add any melting cheese as topping
