
-3 cups cooked fusilli / penne / rotini (cooled)
-1/2 cup cherry tomatoes (halved)
-1/2 cup black or green olives (sliced)
-1/4 cup bell peppers (red/yellow, diced)
-1/4 cup cucumber (optional)
-1/4 cup sweet corn (optional)
-1/4 cup grated parmesan or mozzarella cubes
-2 tbsp fresh basil or parsley
-3 tbsp olive oil
-1 tbsp lemon juice or red wine vinegar
-1 tsp Italian seasoning
-1 tsp garlic (minced or powder)
-Salt & pepper to taste
- Cook pasta in salted water, drain, and cool completely.
- Mix all veggies and cheese with pasta.
- Whisk dressing ingredients and pour over.
- Toss gently, chill for 30 minutes, and serve.
- Add dressing just before serving to keep pasta fresh.
Holds up well without reheating
