Peach Yoghurt Cups with compote

Ingredients

Fresh Yoghurt 500 g Low fat cream 100 g Peaches 5 Castor sugar 200 g Paper cups 8-10

Directions

Hang the yoghurt in a muslin cloth for 3-4 hours to drain away the liquids. ( It is advisable to do it in the refrigerator to avoid the curds from turning sour).whip the cream till it stands in soft peaks. Dice two peaches. Finely chop the remaining three peaches. Put the chopped peaches in a pan with 200g sugar, 100ml water and put on medium heat. Cook till the compote acquires a glazed look.allow to cool. Add the diced peaches, cream and castor sugar to the hung curd and mix well( the curd should be so thick that it does not fall off the bowl when it is inverted). Line tart moulds with Paper cups and fill in the peach yoghurt. Freeze for 2-3 hours till soft frozen. Remove from the tart cases and peel away the paper cups. Serve with peach compote.
