Brijal/ Eggplant
Tamarind juice
Fenugreek seeds
Cumin powder
Coriander powder
Cumin seeds
Mustard seeds
Red chilli powder
Whole garam masala
Chopped green chillies
Chopped onions


70% done, add sesame seeds and coconut powder.

Add water and blend the above roasted content in a blender into a paste (little grainy).

Cut each Brinjal/eggplant into four pieces with the stem intact.

Take a deep bottom vessel and pour oil for deep fry.

Fry the cut brinjal/eggplant till they are 70% done or they become soft.

Take a vessel, add oil and whole garam masala (bay leaf, cinnamon,cloves,Elachi) , mustard seeds, cumin seeds, fenugreek seeds and chopped onion, salt, curry leaf and little bit hing.

Fry till the onions turns brown, add ginger garlic paste, turmeric , water, 1 table spoon of coriander powder,1 table spoon cumin powder, 1/2 tea spoon of chilli powder. Bring it to a boil.

Add the above made peanut, sesame paste, and keep stirring while cooking on medium flame.

After 5 mins cooking, add the tamarind juice, and 1 table spoon of jaggery and salt.

Once the oil starts oozing out or the gravy comes to the desired consistency,add the fried brinjals.

Cook on low flame for 5minutes.

Serve hot.
