5 Baby Carrots, 1 Medium Size Potato, 1 Medium Size Tomato,1/2 Beet Root,1/2 onion,1/2 capsicum,1/2 cucumber, 2 Tbs Sweet Corn kernels, 2 Tbs Green Peas, 1/2 Apple, Raisins,soaked groundnuts, salt and pepper.
Optional - Cilanto and Lemon Juice
Boil potato, baby carrots and beet root in pressure cooker with 3 whistles. Take a big salad bowl,chop finely onion,tomato, cucumber,capsicum and apple. Add sweet corn, green peas and soaked groundnuts. Peel off the covering of boiled potato and beet root and cut them into small pieces including the baby carrots. Now mix all the vegetables in the bowl and keep it in fridge for half hour. Just before the dinner take it from fridge and garnish the salad with raisins. Add salt and pepper as needed. If u like add finely chopped cilantro and lemon juice whiel eating.
