Veggie Stuffed Red peppers

Red bell Pepper – 2-3
Saffola Active Oil – 2 tsp 5 ml
Garlic – 3 to 4 cloves (Chopped)2 g
Carrot – ½ cup 75 g (Chopped)
Broccoli – ½ cup (Cut into small florets)75 g
Corn kernels – ½ cup 75 g
Saffola Pepper and Spice Oats – ½ cup 50 g
Water – 1 cup 200 ml
Salt to taste
Paneer – ¼ cup (Grated)50 g
Coriander- Few sprigs for garnishing
Wash the Red bell Peppers, and cut them into half.
Heat Saffola Active Oil in a pan.
Add garlic, and fry for a few seconds.
Add carrot, broccoli, corn and peas, and cover and cook for 3 to 4 minutes.
Add Saffola Pepper and Spice Oats along with water.
Add salt to taste and cook for 3 to 4 minutes.
Remove the pan from the heat, and let the mixture cool.
Stuff the Red bell Peppers with the vegetables and oats mixture.
Sprinkle paneer on the top.
Pre-heat the oven to 180 degree C.
Arrange the Red bell Peppers on a baking tray, and bake them for 25 to 30 minutes.
Garnish with coriander.
