1. Pumpkin peel ( cut into pieces)
2. Urad dal 1 table spoon
3, Red chili 2 or 3 to taste
4. Tamarind paste 1/2 teaspoon
5. Raw coconut 3 table spoon
6. salt to taste
7. Oil 4 teaspoon.
8 Hing 1/4 teaspoon
9 Onion half chopped.
10 curry leaves some optional chopped
After cutting the pumkin instead of throwing the peel and center part prepare tasty healthy chutney.(Except the seeds)
Cook the peels in a pan with very little water till soft.
In a pan, put urad dal,red chilis and hing with 2 spoons of oil and fry till dal turns reddish on slow fire. Add the coconut and fry for a second. Keep it aside. Blend the fried mixture,salt, tamarind and the cooked peel together into paste in a blender. You can use some water if needed.
In a deep pan put the remaining oil,onions and curry leaves and fry on slow fire till crispy. Add the blended mixture into that. Let it boil for 2 or 3 minutes. Use a deeper pan as it spills allover the stove while boiling. Once it becomes thick,put off the fire. Serve this as a dip or side dish. If you want it to be sweetish you can add a small piece of jaggery while blending.
